In a recent blog post, I shared about my son and how he loves to go hunting. The byproduct of that is some amazing lean meat. In order to not have the gamey taste, some complain about we’ve developed some tactics and favorite recipes.
If you’ve never tried deer meat (venison) you should definitely give it a try – you may be surprised how much you like it!
Our favorite venison recipes:
Sausage Balls
- 1 pound of deer sausage
- 8 ounces of softened cream cheese
- 1 1/4 cup of Bisquick
- 16 oz of shredded cheddar cheese
- Preheat oven to 400F
Mix all the ingredients together – we found it easier to break up the sausage with our hands and use a hand mixer to mix up everything.
Hand roll into about 24 balls that fit inside your hand. Cook on parchment paper or an oiled cooking tray. I prefer vegetable oil spray. Cool time is 20-25 minutes or until brown.
Deer Spaghetti & Meatloaf
Super easy – deer meat in place of your favorite beef recipe. Add a little water to the pan because the meat is so lean compared to beef. That will help it prevent sticking.
Deer Cube steak
Walmart sells a meatloaf seasoning packet that we use to season this. In an open skillet on medium heat add 2 cups of water and the seasoning. Add the deer meat and cook till done. Remove from the pan and add flour to thicken the gravy. This goes great over white rice with some green beans or lima beans.
Pan-seared Venison Sausage links
The deer sausage is so lean you’ll need to add water to the pan so you’re sausage doesn’t stick. After browning on all sizes cut up the links into half-inch pieces. Brown on both sides and then eat away! We love cooking pancakes and fried eggs over easy with this. Adding some syrup over your pancakes and dipping your sausage bites is amazing.
